Go on... say goodbye to store bought Mayonnaise.

ADD THE OIL TO A WIDE MOUTH MASON JAR OR JUG

you want a neutral tasting oil such as LIGHT tasting olive oil or avocado oil

ADD THE REMAINING INGREDIENTS

the cracked fresh egg, squeeze of lemon, squirt of dijon mustard & pinch of salt

TRAP THE EGG YOLK

with the blade of the immersion blender and turn it on high speed. DON'T MOVE until you start seeing a creamy liquid form

SLLLLOWLY

start moving the immersion blender up and down until all of the ingredients are nicely emulsified. This should take about 30 seconds
