the potatoes into wedges simply by halving them, then halving those halves again.

SOAK, SOAK, SOAK

the wedges in cold water for 30 minutes to release their starches making them EXTRA CRISPY

PAT, PAT, PAT

the wedges dry with paper towel trying to absorb as much of the leftover moisture as possible

SEASON, SEASON, SEASON

with your favourite oil & seasonings or just salt & pepper

LINE 'EM UP

in a single layer on a rimmed baking sheet with enough room in between each to breathe

BAKE, BAKE, BAKE

'em up in a 450° oven for 30-35 minutes or until the edges are browned and crispy

PRO TIP

don't forget to flip them halfway through baking to ensure even cooking and crisping up on each side
