HEALTHY CARROT SOUP

Delicious AND nutritious.

ADD, ADD, ADD

the olive oil, onions and garlic to a large pot and sautée until soft & translucent, a few minutes 

ADD, ADD, ADD

the carrots, cumin & coriander and cook an additional 5 or so minutes, stirring occasionally

ADD, ADD, ADD

the broth, salt & pepper, bring it to a boil and cook, covered for 20-25 minutes or until the carrots are fork tender

BLEND, BLEND, BLEND

the soup using an immersion (or regular) blender until smooth and velvety

STIR, STIR, STIR

in the coconut milk for an even creamier and silkier texture

It's like a hug in a bowl.
