ITALIAN STYLE CHEESY CHICKEN SKILLET

Ooey, gooey melted pockets of delicious bocconcini cheese in a flavourful tomato sauce. What could be better?!

PAT, PAT, PAT

the chicken dry with paper towel then season generously with salt & pepper

SEAR, SEAR, SEAR

the chicken breasts lightly on both sides just until browned but not cooked through

SAUTÉE, SAUTÉE, SAUTÉE

the onions & garlic in some oil in an oven safe skillet until soft & transluscent

ADD, ADD, ADD

the canned tomatoes & seasonings & mix until well combined

NEXT UP

the tomato paste & fresh chopped basil. Give it a good stir crushing the tomatoes up with the back of the spatula

ADD THE SEARED CHICKEN BACK INTO THE SKILLET

along with freshly grated parmesan cheese & 2 sprigs of fresh oregano on either side

BAKE, BAKE, BAKE

in a 400° oven for 25-30 minutes 

LOAD 'ER UP

with all those delicious mini bocconcini balls anywhere you can find a spot!

RETURN 'ER TO THE OVEN

for another 5-8 minutes or until the cheese is niiiice & bubbly
