SOUP SEASON

CLASSIC & SIMPLE FRENCH ONION SOUP RECIPE

The simplest soup that tastes SOOO good. I got you with my mom's famous recipe.

SLICE, SLICE, SLICE

the onions thinly (don't worry, every tear shed will be totally worth it!)

MELT, MELT, MELT

the butter in a pot over medium low heat

ADD THE ONIONS

and cook 20-25 minutes, stirring frequently, until soft, browned & somewhat caramelized

NEXT UP

add the broth, water and salt, cover & simmer for at least an hour

TOAST, TOAST, TOAST

the bread slices (I simply put them under a broiler for a minute or so)

ASSEMBLE THE SOUP

start with a toasted baguette slice in each bowl. Then ladle in the onions & broth being sure to get a lot of both

NOW FOR THE GOOD STUFF

as much freshly grated mozzarella & parmesan cheese as your little heart desires

BAKE, BAKE, BAKE

in a 350° oven for 5-10 minutes or until the cheese is nice & bubbbbbly. Broil for a couple of minutes to brown the tops and crisp up the cheese, if desired
