Mornings just got better with these fluffy AF Blueberry Ricotta pancakes.

MIX, MIX, MIX

the dry ingredients together in a bowl

MIX, MIX, MIX

the wet ingredients in a separate bowl

MIX, MIX, MIX

the dry ingredients with the wet ingredients

WHIP, WHIP, WHIP

the egg whites with a hand blender until stiff peaks form

ADD, ADD, ADD

the egg white meringue to the batter using a rubber spatula

LET'S MAKE THESE BABIES

heat some butter in a  hot skillet, ladle in the pancake batter then add a generous amount of blueberries

FLIP, FLIP, FLIP

cook evenly on both sides, until the edges are firm and golden brown and the batter no longer runny

Best served with maple syrup, butter & extra blueberries.
