GLUTEN FREE COCONUT MACAROONS

SIMPLE INGREDIENTS | 2 WAYS

These Coconut Macaroons are not only Gluten Free but they're Keto Friendly, Vegan & Egg & Dairy Free, as well.

START BY 

adding the coconut milk, sweetener & salt to a pot over medium heat then whisking to combine

NEXT UP

add in the coconut flour and whisk until smooth

IF MAKING THE CHOCOLATE VERSION,

whisk in the cocoa powder now

BOIL THEN SIMMER

the liquid until it thickens then remove it from the heat

LASTLY,

add in the vanilla extract & coconut flakes and stir to combine

THE TWO VERSIONS SHOULD LOOK LIKE THIS

plain coconut & chocolate coconut

LINE A BAKING SHEET WITH PARCHMENT PAPER

& preheat the oven to 350°

DROP THE MACAROONS ON THE BAKING SHEET

don't work or shape them too much

THEY DON'T NEED TOO MUCH ROOM IN BETWEEN

as they don't grow or rise too much as they bake in the oven

TIME TO BAKE!

at 350° for 16 minutes. Allow to cool before handling as they're VERY crumbly!
