Lemony. Garlicky. Tender & Soft. I mean, am I in Greece?!

PREPARE THE POTATOES

by peeling them and cutting them into large bite sized chunks

LOAD 'EM UP

with the remaining ingredients - garlic, oregano, lemon juice, salt, pepper, water & EVOO

STIR, STIR, STIR

them up until they're nicely coated and all submerged in the liquid

ROAST, ROAST, ROAST

in a 420° oven for 40 minutes

TOP, TOP, TOP

the potatoes with a few extra sprinkles of oregano, salt & pepper and more water

ROAST, ROAST, ROAST

for an additional 40 minutes (all the time is worth it, I promise!)
