Just when you thought bacon couldn't get any better...

the pork belly dry with clean paper towel to absorb any moisture

the bottom of a baking dish and then add in your raw pork belly

the tops and sides of the pork belly then cover the container with foil, plastic wrap, or the lid

DRAIN, DRAIN, DRAIN

any moisture or liquid that collected (repeat DAILY for 7-10 days)

SALT, SALT, SALT

the pork belly on all sides again then back in the fridge

BE PATIENT

you're going to repeat the process of turning the pork belly, draining the liquid, and replenishing the salt everyday for 7-10 days

RINSE, RINSE, RINSE

off all the salt then pat the pork belly dry with clean paper towel

BAKE, BAKE, BAKE

in a 200°F oven until the internal temperature reaches 150°F

in the fridge until firm (making it easier to slice)

the skin and then slice into your desired thickness
