Mashed potatoes or mashed cauliflower?!

ROAST, ROAST, ROAST

a head of garlic in a 400° oven for 40-50 minutes until soft

STEAM, STEAM, STEAM

a head of cauliflower florets until soft and fork tender

DRAIN, DRAIN, DRAIN

the cooked cauliflower on paper towels then blot it dry to remove any excess moisture

ADD, ADD, ADD

the drained cauliflower, roasted garlic, butter, salt, pepper and sour cream to the base of a food processor

BLEND, BLEND, BLEND

until smooth and creamy

ADD, ADD, ADD

the mashed cauliflower to a bowl and then add in your crispy bacon, grated cheddar and green onions

STIR, STIR, STIR

it all up until nice and well combined

So potato-like you really can't tell the difference!
