THE BEST ITALIAN RICE BALLS AKA ARANCINI

Warm Tomato Sauce. Cheesy Centers. Fried to golden perfection. What more could you ask for?!

BROWN, BROWN, BROWN

the ground beef in a skillet with some oil until mostly cooked through. Drain, if necessary.

HEAT, HEAT, HEAT

the chicken broth on low heat until nice & hot but not boiling

ADD, ADD, ADD

the butter to a large pot. When melted, throw in the onions and cook until soft & transluscent

ADD, ADD, ADD

the browned ground beef back into the pot along with the rice and give it a good stir to coat everything in the butter 

ADD, ADD, ADD

the wine, hot chicken broth & salt and give it a good stir to ensure that everything is nicely combined

COVER, COVER, COVER

and simmer on low heat for 20-25 minutes or until most of the liquid has evaporated

ADD, ADD, ADD

the frozen peas and stir, stir, stir until everything is well combined

SPREAD, SPREAD, SPREAD

the rice mixture out onto a lined baking sheet to allow it to cool 

ONCE COOLED

stir in the freshly grated parmesan cheese & fresh chopped parsley

NOW FOR THE FUN PART

make the rice balls! Using your hands, form balls putting a cube of mozzarella in the center

SET UP YOUR DREDGE STATION

one bowl of flour, one bowl of beaten eggs and one bowl of Italian seasoned breadcrumbs

FIRST THINGS FIRST

roll the rice ball in the flour, shaking off the excess

NEXT UP

dip it into the beaten eggs allowing the excess to drip back into the bowl

FINALLY

roll it in breadcrumbs ensuring that the entire surface is completely covered

HEAT, HEAT, HEAT

the oil in a pan until it reaches at least 350°

FRY, FRY, FRY

the rice balls for about 3 minutes, turning often to brown on all sides

LAY 'EM DOWN

on a paper towel lined baking sheet & hit 'em with some extra salt as soon as they come out of the fryer
