LOW FODMAP SPINACH MASHED POTATOES

Spinach + Mashed Potatoes = the 2-IN-1 Side Dish

CUT, CUT, CUT

the potatoes into even size chunks (no need to peel them)

ADD, ADD, ADD

them to a pot with salt and cover with cold water. Put on the lid.

BOIL, BOIL, BOIL

until soft and fork tender, about 15-20 minutes (keep checking)

HEAT, HEAT, HEAT

up the milk on low heat until hot to the touch but not boiling

ADD, ADD, ADD

the spinach into the bottom of the hot pot immediately after draining the potatoes then add the potatoes back in on top. Mash it up a bit

SLOWLY, SLOWLY, SLOWLY

pour in the milk a bit at a time, mashing in between, until you reach your desired consistency

SEASON, SEASON, SEASON

with salt, pepper, paprika & chili flakes then stir until well combined and the spices are evenly distributed
