Turns out that a good Meat Sauce doesn't need onions or garlic afterall.

SAUTÉE, SAUTÉE, SAUTÉE

the diced carrots in some olive oil for a few minutes, stirring occassionally

NEXT UP

add the diced red peppers & jalapeños and sautée a few minutes

ADD HALF THE GREEN ONIONS

and give it a good stir sautéeing for another minute or two, until soft

MOVE THE VEGGIES OVER

to one side of the pot, add a little bit more oil and the ground beef

NEXT UP

add the crushed tomatoes, salt/pepper, oregano & rest of the green onions

SIMMER, SIMMER, SIMMER

covered, for at least an hour, stirring occasionally to prevent burning or scorching at the bottom of the pot

LAST BUT NOT LEAST

stir in your fresh chopped basil in the final few minutes of cooking
