RESTAURANT STYLE PARM FRIES

the potatoes into even sized french fires then soak them in a bowl of cold water for 30 minutes

DRAIN, DRAIN, DRAIN

then pat them dry to get rid of all the excess moisture

MIX, MIX, MIX

the olive oil and spices together in a small bowl

SEASON, SEASON, SEASON

the raw fries with the olive oil spice mixture - make sure each is well coated

LINE 'EM UP

on a parchment lined baking sheet (with a wire rack if you have one). Bake at 425° for 35-40 mins

SPRINKLE, SPRINKLE, SPRINKLE

on the parmesan cheese then pop them back in the oven for 5 or so minutes or until the cheese is melted
