INDIAN BUTTER CHICKEN RECIPE

WARNING: Makes the house smell irresistibly DELICIOUS as it cooks.

CUT, CUT, CUT

the chicken breasts into similar size chunks or cubes (you can also use chicken thighs)

MARINATE, MARINATE, MARINATE

the cubed chicken in the greek yogurt and spices for at least 30 minutes but up to overnight

SEAR, SEAR, SEAR

the chicken pieces in a bit of coconut oil for a couple minutes on each side

SAUTÉE, SAUTÉE, SAUTÉE

some onions, garlic and ginger in a hot pan until soft and translucent, about 5 minutes

ADD, ADD, ADD

the sauce spices and stir until fragrant. Then add the butter and stir until melted

NEXT UP

pour in the coconut milk and use your spatula to scrape the browned bits off the bottom of the pan

NEXT UP

add in the tomato sauce & paste and any excess yogurt marinade leftover from the chicken

SIMMER, SIMMER, SIMMER

about 15-20 minutes or until the sauce reduces and thickens. It should be nice & bubbly at this point!

ADD, ADD, ADD

that semi-cooked chicken back into the pan & cook it in the sauce for an additional 8-10 minutes

Don't forget the cilantro, steamed rice and garlic buttered naan bread!
