A Ragu that's rich, creamy, Vegetarian & delicious all the way around.

SAUTÉE THE ONIONS & GARLIC

on medium low heat until soft, stirring frequently

season with salt & pepper and cook until soft, tender and all the liquid evaporates

ADD THE MUSHROOMS

WHO'S READY FOR SOME WINE?!

I know these mushrooms are! Cook until the mushrooms absorb all the liquid!

NEXT ADD IN THE TOMATO PASTE & SPICES

cook and stir for a couple of minutes...

NOW THE LAST BITS OF FLAVOUR...

diced tomatoes, salt & pepper, parmesan rind. Cover & simmer for at least 30 minutes

Oh, how I wish you could smell this right now.

LET'S FINISH THIS BABY OFF...

with some heavy cream & fresh chopped parsley...
