the stems from the mushrooms and chop them up finely

the mushroom stems with a bit of garlic in a skillet until soft

the hollow mushrooms in a 350° oven for 10 minutes to extract some of the moisture, then pat them dry with clean paper towels

all of the filling ingredients to a bowl then mix until well combined
