all the spices in a bowl until well combined

any fat off the pork loin then cut it open like a book ("butterfly")

POUND, POUND, POUND

it into an even thickness all the way around to flatten it out a bit

STUFF, STUFF, STUFF

with caramelized onions, fresh cranberries and goat cheese

ROLL, ROLL, ROLL

it into a log and generously season the entire outside with the spice mix

TIE, TIE, TIE

it up with kitchen twine to hold the delicious filling in place

BAKE, BAKE, BAKE

in a 450° oven for 40-60 minutes
