Ingredients
6Scotch Bonnet Peppers*sliced with the seeds kept in
3Onionschopped
8Cloves Garlicminced
1cupOrange Juice
1cupWhite Vinegar
½cupExtra Virgin Olive Oil
½cupSoy Sauce
2tbspDried Thyme
2tbspAllspice
2tbspSugar
2tbspSalt
2tspBlack Pepper
2tspCinnamon
2tspNutmeg
2tspGround Ginger
Juice of 1 Lime
Instructions
Coarsely chop the scotch bonnet peppers, onions, and garlic. Don't worry about going too fine as the food processor will take care of that.
Add all the ingredients into a high speed blender or food processor, working batches if you have to.
Process until mostly smooth and no big chunks remain.
Notes
If scotch bonnet peppers are hard to find, use habanero peppers instead. Or, for a milder jerk sauce, use jalapeños.
