1poundCarrotspeeled and sliced into rounds or sticks
2tbspExtra Virgin Olive Oil
2tbspBalsamic Vinegar
2tbspHoney or Maple Syrup
1tspDijon Mustard
Salt and Pepperto taste
Fresh Chopped Parsleyfor garnish, optional
Instructions
Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a bowl, whisk together the olive oil, honey or maple syrup, balsamic vinegar, Dijon mustard, salt, and pepper.
Add the carrots to a bowl and toss them in the glaze mixture until they are well coated.
Spread the carrots on the prepared baking sheet in a single layer.
Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized. Be sure to stir them once or twice during cooking. Garnish with fresh chopped parsley, if desired, and serve immediately.
