Ingredients
1cupOrzo Pasta
2cupsChicken or Vegetable Broth
2tbspExtra Virgin Olive Oil
1Onionfinely chopped
2Cloves Garlicminced
8oz.Mushrooms (such as cremini or shiitake)sliced
¼cupWhite Wineoptional
¼cupParmesan Cheesefreshly grated
Salt and Pepperto taste
Fresh Parsleychopped, optional, for garnish
Instructions
In a medium saucepan, bring the broth to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain any excess liquid and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-7 minutes, stirring occasionally. If using, pour in the white wine and let it simmer for a couple of minutes until slightly reduced.
Add the cooked orzo pasta to the skillet with the mushrooms and toss everything together until well combined.
Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste. Serve the orzo with mushrooms hot, garnished with fresh chopped parsley, if desired.
