1poundFresh Green Beanstrimmed
1tbspExtra Virgin Olive Oil
2Cloves Garlicminced
2tbspBalsamic Vinegar
1tspDijon Mustard
½tspSalt
¼tspBlack Pepper
¼cupFeta Cheesecrumbled
¼cupSlivered Almondstoasted
Instructions
Bring a pot of water to a boil, add green beans, and cook for about 2–3 minutes until bright green and slightly tender.
Drain and transfer to an ice bath to stop cooking.
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant (don’t let it burn!).
Toss the green beans into the skillet and stir to coat with the garlicky oil.
Add balsamic vinegar, Dijon mustard, salt, and pepper. Stir well and cook for another 2–3 minutes until the beans are tender but still crisp.
Remove from heat and gently toss in the crumbled feta. Sprinkle with toasted almonds just before serving.
