1bunchFresh Flat-Leaf Italian Parsley Leaves(~1 to 1.5 cups, packed)
1tbspExtra Virgin Olive Oil
1tbspLemon Juice(or lime juice for a twist!)
1tspDijon Mustard
1CloveGarlic
1tbspWhite Wine Vinegar(or apple cider vinegar)
Salt and Pepperto taste

Instructions
Remove the leaves from the stems and roughly chop them to make blending easier.
In a food processor or blender, add the parsley leaves, olive oil, lemon juice, Dijon mustard, garlic, white wine vinegar, salt, and pepper.
Process everything until the sauce is smooth and creamy. If the sauce is too thick, add a little water, a tablespoon at a time, until you reach your desired consistency.
Taste your sauce and adjust the seasoning if needed, adding more salt, pepper, or lemon juice to your liking. Drizzle over your favorite dishes, like roasted veggies, grains, or protein.
