Ingredients
¼cupTahini(well-stirred)
1.5tbspLemon Juice
1tbspDijon Mustard
1tspAnchovy Paste(or more if you love that classic Caesar umami)
1smallGarlic Clovefinely grated
1.5tspWorcestershire Sauce
1-2tspMaple Syrup or Honey(just enough to balance the bitterness)
2-4tbspWateras needed, for thinning
Salt and Freshly Ground Black Pepperto taste
Instructions
In a small bowl or jar, whisk together tahini, lemon juice, Dijon, anchovy paste, garlic, Worcestershire, and maple syrup.
Add water a little at a time, whisking until the dressing is creamy and pourable.
Season with salt and black pepper to taste.
Adjust acidity or sweetness if needed.
Notes
This dressing may thicken and naturally separate when stored. Just whisk or shake well before using. If it gets too thick, loosen it with a splash of water until it reaches your desired consistency. Store refrigerated in an airtight container for up to 7 days.
