Make this easy Cottage Cheese Pizza Bowl for a quick low carb dinner that’s cheesy, flavourful, and totally customizable. A healthy twist on pizza night everyone will love.
In a medium bowl, stir together cottage cheese, about 6 tbsp pizza sauce, Italian seasoning, and half of the chopped toppings (bell pepper, olives, onion, and a few pepperoni pieces).
Assemble the bowls. Single-serve method: Divide the mixture between 2 oven-safe bowls (like French onion soup bowls). Family-style method: Spread the mixture into an 8x8" baking dish.
Spoon the remaining pizza sauce over the surface. Sprinkle evenly with mozzarella and parmesan. Add the rest of the toppings. Finish with a little extra Italian seasoning and red pepper flakes.
Broil or bake at 450°F for 10–12 minutes, until the cheese is melted and bubbling with golden spots. Garnish with fresh basil or oregano and enjoy hot!
Notes
To microwave instead: Microwave single-serve bowls on high for 1–2 minutes to heat the base. Add cheese and remaining toppings, then microwave another 30–45 seconds until melted.
