4ripe but still firm peacheshalved and pitted
2tbspunsalted buttermelted
2tbsplight brown sugarplus 2 teaspoons for sprinkling
¾tspground cinnamon
¼tspground cardamom
½tsppure vanilla extract
pinch of salt
Optional for Serving
vanilla bean ice cream
whipped cream
Greek yogurt
chopped toasted pecans
fresh mint
Instructions
Preheat your air fryer to 380°F (193°C).
In a small bowl, whisk together the melted butter, brown sugar, cinnamon, cardamom, vanilla extract, and kosher salt until well combined.
Arrange the peach halves, cut side up, in a single layer in the air fryer basket, leaving a little space between each one.
Brush the peaches generously with the cinnamon butter mixture, then sprinkle the tops with the remaining brown sugar.
Air fry for 8 minutes. Check for doneness. The peaches should be fork-tender with lightly caramelized edges while still holding their shape. If needed, cook for 1 to 2 more minutes, depending on the size and ripeness of your peaches.
Carefully remove the peaches from the air fryer and spoon any remaining cinnamon butter from the basket over the top.
Serve warm with a scoop of vanilla ice cream, whipped cream, Greek yogurt, toasted pecans, fresh mint, or your favourite toppings.
Notes
Use ripe but firm peaches. Overripe peaches soften too quickly and won't hold their shape in the air fryer.Leave the skins on. They help the peaches hold together during cooking and are easy to remove after if preferred.Leave space between the peaches. Overcrowding the basket traps steam and prevents those lightly caramelized edges.Check for doneness at 8 minutes. Air fryers vary, so cook just until the peaches are fork-tender but still intact.Spoon the cinnamon butter over the peaches before serving so none of that rich, buttery flavour goes to waste.Store leftovers in an airtight container in the refrigerator for up to 4 days. Enjoy them cold or gently reheat before serving.
