These Garlic Mashed Potatoes are deliciously creamy, full of garlic flavour and pair well with virtually any meal! With only a few simple ingredients, they're easy to make and slightly addicting.

Ingredients
2poundsPotatoes* (~4-6 potatoes)
5Cloves Garlicpeeled
1/2-3/4 cup cupChicken Brothheated
2tbspButter or Ghee
1tspSaltplus more to taste
Fresh Ground Pepperto taste
Fresh Parsley (or other herbs)optional, for garnish
Instructions
Cut the potatoes into 1 1/2-inch to 2-inch chunks for easy cooking. You can choose to leave the skin on or peel them*
Add the potatoes and garlic to a large pot.
Add enough cold water to cover them. Add the salt and stir. Bring to a boil and cook for 15-20 minutes, uncovered, until the potatoes are cooked through and fork tender. Drain and return to the pot.
Meanwhile, heat the chicken broth on the stove over medium low heat.
Add the salt, pepper, and half of the chicken broth.
Mash until smooth, adding more chicken broth as needed to reach your desired consistency.
Taste and adjust seasonings. Add more salt, fresh cracked pepper and fresh chopped herbs, if you prefer.
Notes
I used yellow potatoes but yukon gold or russet will also work.I chose to peel half of the potatoes and leave some with the skin on. However, next time, I think I'll peel them all.
