Ingredients
12slicesBacon
12thin slices Cheddar Cheese*
6large Jalapeños
1 8 oz. brickCream Cheesesoftened
⅓cupGreen Onionssliced
½tspGarlic Powder
½tspSalt
¼tspPepper
Instructions
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Cut the jalapeños in half lengthwise and remove all the seeds and ribs using a spoon.
In a bowl, add the cream cheese, green onions, garlic powder, salt, and pepper.
Use a fork to mash until well combined.
Using a spoon or rubber spatula, fill each jalapeño half with the cream cheese mixture.
Carefully smooth out each top.
Gently press a piece of cheddar cheese into the cream cheese in each jalapeño half.
Wrap each half in 1 whole slice of bacon.
Lay them in a single layer on the baking sheet.
Bake for 25-30 minutes, broiling in the last 5 minutes. The bacon should be nice and crispy. Carefully transfer to a paper towel lined plate and let cool for 10 minutes before serving.
Notes
The cheese oozes out of the jalapeños a bit while baking which creates a deliciously crispy cheese "skirt" around them. If you don't like the idea of this, simply grate the cheese instead of slicing it and add it directly to the cream cheese mixture.
