Ingredients
1cupAlmond Pulp
1cupAll Purpose Flour
¾cupCoconut Oil or Butter
¾cupRaw Sugar (such as Coconut Sugar)
2tbspNut Butter of Choice (such as almond butter or peanut butter)
1tspSalt
1tspVanilla Extract
½tspCinnamon
Instructions
Preheat oven to 350°F.
Mix the sugar and butter/oil with a hand held blender on medium speed until smooth.
Add everything else and mix with a rubber spatula until combined.
Make meat-ball sized balls with the dough in your palms then place them on a greased baking sheet. You want to make sure there is enough room between the balls for them to expand in the oven a bit as they bake. Press the balls down gently with a fork to flatten.
Bake for 15-20 minutes, until the sides are crispy but the tops still soft.
Allow to cool to room temperature on a wire rack before digging in.
