These zero waste almond pulp cookies check ALL the boxes. I mean, zero waste is all I need to hear for all the boxes to be checked. I call ’em zero waste because the main ingredient is the leftover pulp that comes from making homemade almond milk.

Now, let’s be honest, that pulp would otherwise find itself in the garbage can. Am I right? But now, since I’m giving you more than a perfectly good use for it, you’re always gonna fall back on making these cookies every time you whip up a fresh batch of homemade almond milk. You’d feel guilty if you didn’t. Talk about milk and cookies being a match made in heaven.

HOW THESE ALMOND PULP COOKIES STOPPED MY SLEEP EATING BOYFRIEND

We’ve all heard of the term sleep walker before, right? You know, them (scary ass) people who are literally asleep but walking and sometimes talking and doing other weird things like somehow sleepily making their way to the fridge and eating EVERYTHING in sight?! Or is it just MY boyfriend that does that?

I took to google, ’cause I actually needed to know, am I the only one that is seriosuly considering buying a padlock for all doors and cupboards leading to food I can only dream of devouring?! You know when you make a dinner SoooOooO good (exhibit a: pasta with cauliflower and bacon) and salivate all night dreaming about how tasty those leftovers are going to be for lunch the next day, only to wake up and find that apparently you no longer have a lunch because your boyfriend ate it all in his sleep?!?!! I learned today that there’s an actual name for what my lunch-guzzling thief of a BF might have: night eating syndrome (NES). Mhm. I swear it. But is there a cure?!

Leave it to me to find out ’cause I’ll be damned if I let anyone come that close to my lunch again. I left a trail of these almond pulp cookies out for testin’ one night and it was GAME. OVER. Lunch-guzzling thief, no more. One bite (and 5 cookies later but hey, it’s a far cry from the WHOLE fridge) and he forgot there was even other food present. Just don’t plan on having ’em for breakfast.

Ingredients
  

  • 1 cup Almond Pulp
  • 1 cup All Purpose Flour
  • ¾ cup Coconut Oil or Butter
  • ¾ cup Raw Sugar (such as Coconut Sugar)
  • 2 tbsp Nut Butter of Choice (such as almond butter or peanut butter)
  • 1 tsp Salt
  • 1 tsp Vanilla Extract
  • ½ tsp Cinnamon

Instructions
 

  • Preheat oven to 350°F.
  • Mix the sugar and butter/oil with a hand held blender on medium speed until smooth.
  • Add everything else and mix with a rubber spatula until combined.
  • Make meat-ball sized balls with the dough in your palms then place them on a greased baking sheet. You want to make sure there is enough room between the balls for them to expand in the oven a bit as they bake. Press the balls down gently with a fork to flatten.
  • Bake for 15-20 minutes, until the sides are crispy but the tops still soft.
  • Allow to cool to room temperature on a wire rack before digging in.

  1. You can absolutely use a gluten-free flour blend instead! I recommend one that’s meant to substitute 1:1 for all-purpose flour. The texture might turn out a little more tender or crumbly depending on the mix, but it should still work great!
