Ingredients
1.5cupsfresh or frozen corn kernels
1tspavocado oil or olive oil
2cupsfresh pineapplediced
½cupbell pepper finely diced
⅓cupred onionfinely diced
1smalljalapeñoseeded and finely diced
⅓cupfresh cilantrochopped
2tbspfresh lime juice
1tsplime zest
½tspsalt plus more to taste
Instructions
Heat the oil in a large skillet over medium high heat. Add the corn in an even layer and cook for 4–5 minutes, stirring once or twice, until lightly charred in spots. Transfer to a plate and let cool completely.
Add the cooled corn, pineapple, bell pepper, red onion, jalapeño, cilantro, lime juice, lime zest, and salt to a large bowl.
Gently toss everything together until evenly combined. Allow the salsa to sit for 15 minutes so the flavours can mingle.
Taste and add more salt or lime juice, if needed. Serve with tortilla chips or spoon over tacos, grilled chicken, pork, seafood, or rice bowls.
Notes
Use fresh pineapple if possible. Choose one that’s ripe and sweet but still firm. Overripe pineapple can make the salsa watery.Cool the corn completely before mixing it with the fresh ingredients to keep everything crisp.Adjust the heat. Remove the jalapeño seeds and membranes for mild salsa, or leave some in for extra kick.Make it party-ready. Hollow out half a pineapple and serve the salsa right inside it for a fun, tropical presentation.Store leftovers in an airtight container in the fridge for up to 3 days. Stir and drain off any excess liquid before serving.
