Fresh Pineapple Corn Salsa

Fresh, juicy, a little smoky, and just spicy enough, this pineapple corn salsa has a little bit of everything going on. Sweet pineapple and lightly charred corn are such a good combo, with plenty of lime, jalapeño, red onion, and cilantro to keep things fresh, zesty, and perfectly balanced.

This pineapple corn salsa has so much going on in the best way. You get juicy pineapple, crisp veggies, little pops of charred corn, and that sweet, tangy, savoury combo that makes it dangerously easy to keep scooping. The char on the corn is especially good here because it adds a deeper, slightly smoky edge without taking away from how fresh the whole thing tastes.

Grab the tortilla chips and call it an appetizer, or spoon it over air fryer shrimp tacos and make a whole meal out of it. And if fresh, chunky salsas are your thing, my corn and bean salsa deserves a spot on your next taco night too.

Tips for Crisp, Flavourful Salsa

  • Start with firm, ripe pineapple. You want it sweet and juicy, but not so ripe that it’s soft or swimming in juice. Firmer pineapple holds its shape better and helps keep the salsa chunky instead of watery.
  • Let the corn cool completely. That little bit of char adds so much to the salsa, but give the corn time to cool before tossing it with everything else. Warm corn can soften those crisp, fresh ingredients.
  • Keep everything around the same size. Small, evenly diced pieces mean you actually get pineapple, corn, pepper, onion, and jalapeño together in one glorious scoop.
  • Give it 15 minutes before digging in. A short rest gives the lime, salt, pineapple juices, and jalapeño a chance to mingle. Taste it again after it sits, then add another pinch of salt or squeeze of lime if you think it needs it.
  • Expect a little liquid as it sits. Pineapple naturally releases juice, especially once it’s mixed with lime and salt. That’s totally normal. If the salsa sits for a while and there’s more liquid than you’d like, simply give it a stir or drain a little off before serving.

Tacos and Bowls

Spoon it generously over fish, shrimp, or chicken tacos, or use it to brighten up a rice or burrito bowl. It would also be right at home piled onto my crispy beef tacos for a fresh, sweet contrast to the savoury filling.

For bowls, start with rice, add your favourite protein, then pile this salsa right on top. A little guacamole or chipotle sour cream alongside it and dinner is pretty much handled.

Grilled Meat and Seafood

Pineapple and smoky, simply seasoned proteins are always a good match. Try this salsa spooned over pan-seared salmon, grilled chicken, white fish, shrimp, or pork. The juicy pineapple and lime cut through richer meats, while the jalapeño and charred corn give everything a little extra oomph.

Chips and Appetizer Spreads

Sometimes the best answer really is just chips and salsa. Grab some sturdy tortilla chips, or make your own crispy homemade tortilla chips, and let everyone dig in.

For summer BBQs or taco night, serve the salsa right inside a hollowed-out pineapple for a fun little party moment. Add a pitcher of my pineapple coconut margaritas and, I mean… we know where this is going.

I don’t recommend it. Freezing and thawing will soften the pineapple and fresh veggies, taking away that crisp texture that makes this salsa so good.

For this recipe, yes. I quickly cook the corn in a hot skillet until some of the kernels are lightly charred. It brings out their sweetness and adds a little smoky, savoury flavour that works so well with the fresh pineapple.

Fresh pineapple is my first choice because it gives the salsa the best flavour and crisp texture. Canned pineapple can work in a pinch, but choose pineapple packed in juice rather than syrup and drain it really well. I don’t recommend frozen pineapple since it tends to become softer and release more liquid once thawed.

Start with a ripe but firm pineapple rather than an overly soft one, and make sure any ingredients with extra moisture are well drained or dried. Some liquid is completely normal as the pineapple, lime, and salt mingle, especially the longer the salsa sits. If needed, simply drain off a little excess liquid before serving.

Absolutely. You can prepare it up to 8 hours ahead and keep it covered in the fridge. The salsa will still taste great after that, but the texture is at its crispiest and freshest the same day it’s made.

Stored in an airtight container, leftovers will keep in the fridge for up to 3 days. Give the salsa a good stir before serving and drain off any extra liquid that has collected at the bottom.

Pineapple Corn Salsa

Ingredients
  

  • 1.5 cups fresh or frozen corn kernels
  • 1 tsp avocado oil or olive oil
  • 2 cups fresh pineapple (diced)
  • ½ cup bell pepper (finely diced)
  • ⅓ cup red onion (finely diced)
  • 1 small jalapeño (seeded and finely diced)
  • ⅓ cup fresh cilantro (chopped)
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • ½ tsp salt (plus more to taste)

Instructions
 

  1. Heat the oil in a large skillet over medium high heat. Add the corn in an even layer and cook for 4–5 minutes, stirring once or twice, until lightly charred in spots. Transfer to a plate and let cool completely.

  2. Add the cooled corn, pineapple, bell pepper, red onion, jalapeño, cilantro, lime juice, lime zest, and salt to a large bowl.

  3. Gently toss everything together until evenly combined. Allow the salsa to sit for 15 minutes so the flavours can mingle.

  4. Taste and add more salt or lime juice, if needed. Serve with tortilla chips or spoon over tacos, grilled chicken, pork, seafood, or rice bowls.

Notes

Use fresh pineapple if possible. Choose one that’s ripe and sweet but still firm. Overripe pineapple can make the salsa watery.
Cool the corn completely before mixing it with the fresh ingredients to keep everything crisp.
Adjust the heat. Remove the jalapeño seeds and membranes for mild salsa, or leave some in for extra kick.
Make it party-ready. Hollow out half a pineapple and serve the salsa right inside it for a fun, tropical presentation.
