Ingredients

  • 1 Grilled Chicken Breast per Salad*

SALAD WITH GRILLED CHICKEN #1

  • 2 large handfuls Greens of Choice* (~4 cups)
  • 1 large Apple peeled and sliced
  • ½ cup Goat Cheese crumbled
  • ½ cup Red Onions thinly sliced
  • ¼ cup Toasted Almonds
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • Salt and Pepper to taste

SALAD WITH GRILLED CHICKEN #2

  • 2 large handfuls Greens of Choice* (~4 cups)
  • ½ cup Carrot grated
  • ½ Feta Cheese crumbled
  • ½ cup Green Onions sliced
  • ½ cup Mandarin Oranges drained
  • cup Dried Cranberries
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • Salt and Pepper to taste

Instructions

  • Grill the chicken according to this grilled chicken on the BBQ recipe. Or leftover chicken works like a charm here! If making fresh, allow it to cool slightly before adding it on top of the salad and greens.
  • Assemble the ingredients for the salad of your choosing into a large bowl. I like starting with the greens as the base, then neatly placing the rest of the ingredients in piles on top.
  • Add the cooled and sliced grilled chicken on top of the greens and toppings.
  • Add the oil and vinegar and toss until the dressing coats the salad and all of the ingredients are well combined. Taste and add salt and pepper if desired.

Notes

Any greens of your preference work well here. I love using arugula, spinach, kale, a nice spring mix, or regular ol' lettuce. The choice is yours!
