Steak and Brie Tacos with Caramelized Onions, Walnuts & Lemon Herb Crema

FOR THE TACOS
1lb (454g)Steak (Sirloin, Flank, or Ribeye)cut into 1-inch cubes
1tbspExtra Virgin Olive Oil or Avocado Oil
Salt and Black Pepperto taste
1mediumOnionthinly sliced
1tbspButter
4ozBrie Cheeserind trimmed, cubed
¼cupHeavy Cream
¼cupWalnutstoasted and chopped
1cupArugula
8-10Mini (Street Taco Size) Tortillas
FOR THE LEMON HERB CREMA
½cupSour Cream or Greek Yogurt
1tbspLemon Juice
1tbspFresh Cilantro or Parsleyfinely chopped
Pinch of Salt
Instructions
In a skillet, melt the butter over medium-low heat. Add onions and a pinch of salt. Cook slowly, stirring occasionally, until soft, golden, and jammy — about 20–25 minutes. Transfer to a small bowl.
In a small bowl, stir together sour cream, lemon juice, cilantro (or parsley), and a pinch of salt. Chill until ready to use.
Heat oil in a large skillet over medium-high. Pat steak cubes dry and season with salt and pepper.
Sear for 2–3 minutes per side until browned and cooked to your liking (don't overcrowd the pan, work in batches if you have to). Transfer steak to a paper towel lined plate.
Lower the heat to medium-low. In the same skillet, add brie and cream. Stir until melted into a smooth, creamy sauce. Season lightly with salt and pepper.
Return the steak cubes to the skillet and toss until coated in the brie sauce.
Warm tortillas. Spread a spoonful of lemon-herb crema on each one. Top with brie-coated steak bites, caramelized onions, a handful of arugula, and a sprinkle of toasted walnuts. Enjoy immediately while the steak is hot and the brie sauce is melty.
Notes
Caramelized Onions Tip: These onions are a quick version to get that sweet, golden flavour. If they start to burn instead of caramelizing, just add a splash of water or broth.
