Ingredients
  

FOR THE TACOS

  • 1 lb (454g) Steak (Sirloin, Flank, or Ribeye) cut into 1-inch cubes
  • 1 tbsp Extra Virgin Olive Oil or Avocado Oil
  • Salt and Black Pepper to taste
  • 1 medium Onion thinly sliced
  • 1 tbsp Butter
  • 4 oz Brie Cheese rind trimmed, cubed
  • ¼ cup Heavy Cream
  • ¼ cup Walnuts toasted and chopped
  • 1 cup Arugula
  • 8-10 Mini (Street Taco Size) Tortillas

FOR THE LEMON HERB CREMA

  • ½ cup Sour Cream or Greek Yogurt
  • 1 tbsp Lemon Juice
  • 1 tbsp Fresh Cilantro or Parsley finely chopped
  • Pinch of Salt

Instructions
 

  • In a skillet, melt the butter over medium-low heat. Add onions and a pinch of salt. Cook slowly, stirring occasionally, until soft, golden, and jammy — about 20–25 minutes. Transfer to a small bowl.

  • In a small bowl, stir together sour cream, lemon juice, cilantro (or parsley), and a pinch of salt. Chill until ready to use.

  • Heat oil in a large skillet over medium-high. Pat steak cubes dry and season with salt and pepper.

  • Sear for 2–3 minutes per side until browned and cooked to your liking (don't overcrowd the pan, work in batches if you have to). Transfer steak to a paper towel lined plate.
