This creamy pumpkin and chicken curry is basically fall comfort food in a bowl. Tender chicken, pumpkin, creamy coconut milk, plenty of warm spices, and a squeeze of lime all come together in one seriously saucy meal. And you better believe there’ll be something on the side for soaking up every last drop.
I love a good curry any time of year, but there’s just something about pumpkin that makes this one hit extra hard when the weather starts to cool down. The pumpkin melts right into the coconut milk, making the sauce thick and silky, while curry powder, garam masala, turmeric, cumin, ginger, and garlic bring all that warm, savoury goodness. If my sweet potato curry is already in your rotation, this pumpkin chicken curry needs to be next.
And because we’re not trying to spend all night standing over the stove, the whole thing comes together in about 30 minutes. Juicy chicken thighs finish cooking right in the sauce, a splash of fish sauce adds that little something-something, and fresh lime wakes it all up at the end. This chicken curry with pumpkin is cozy, creamy, ridiculously satisfying, and somehow even better for lunch the next day.

What You’ll Need for Pumpkin and Chicken Curry

A handful of warm spices, creamy coconut milk, and pumpkin purée turn simple chicken thighs into one seriously flavour packed curry. Here’s what you’ll need:
- Chicken Thighs: Boneless, skinless thighs stay juicy and tender as they finish cooking in the curry sauce. Cut them into bite-sized pieces so they cook evenly.
- Pumpkin Purée: Gives the sauce its creamy texture, subtle sweetness, and pumpkin flavour. Use pure pumpkin purée, not pumpkin pie filling.
- Full Fat Coconut Milk: Makes the pumpkin curry rich, silky, and creamy. Full-fat works best here since light coconut milk will give you a thinner sauce.
- Onion, Garlic & Fresh Ginger: The flavour base. Let the onion soften before adding the garlic and ginger so everything gets a chance to build flavour.
- Curry Powder, Turmeric, Garam Masala & Cumin: The warm, earthy spice combo behind all that curry flavour. Chili flakes add a little heat without taking over.
- Tomato Paste: Adds savoury depth and a little acidity to balance the sweeter pumpkin and coconut milk.
- Chicken Broth: Loosens the pumpkin and coconut milk into a saucy consistency without watering down the flavour.
- Fish Sauce: Just a teaspoon adds a salty, savoury boost without making the curry taste fishy. It’s optional, but I love the extra depth it gives the sauce.
- Lime Juice: Stirred in right at the end to brighten up the rich, creamy sauce.
- Coconut or Avocado Oil: For browning the chicken and building the curry right in the same pan.
- Fresh Cilantro or Thai Basil: A fresh pop of flavour for finishing the curry.
- Cashews or Toasted Pepitas: Optional, but highly recommended if you’re like me and need a little crunch on top.

Tips for the Best Pumpkin Chicken Curry
You’ll find the full step-by-step instructions in the recipe card below, but these little things make a big difference:
- Brown the chicken without cooking it through. You’re just looking for some nice golden colour here. The chicken will finish cooking as it simmers in the sauce, which helps keep those thighs nice and juicy.
- Give the onions a few minutes. Let them soften before adding the garlic and ginger. We’re building flavour here, people!
- Bloom those spices. Stir the curry powder, turmeric, garam masala, cumin, and chili flakes around in the pan for about 30 seconds before adding the liquids. Once they smell amazing, you’re ready to move on.
- Go with full fat coconut milk. It gives this pumpkin curry that rich, creamy consistency we’re after. Light coconut milk will leave the sauce noticeably thinner.
- Let the sauce simmer uncovered. This gives it time to thicken while the chicken finishes cooking. If you want it a little thicker, give it another few minutes rather than adding flour or another thickener.
- Don’t skip the lime at the end. That little hit of acidity cuts through the creamy coconut and pumpkin and wakes the whole curry right up.

What to Serve with Pumpkin Chicken Curry
This curry is plenty hearty on its own, but you’re definitely going to want something to scoop up all that creamy pumpkin coconut sauce. Here are a few favourites:
- Rice: You can’t go wrong with a big scoop of fluffy white rice underneath all that saucy goodness.
- Naan: Warm homemade naan is pretty much made for dragging through every last bit of curry left in the bowl.
- Cauliflower Rice: Want to keep things a little lighter? Cilantro lime cauliflower rice adds freshness without competing with the curry.
- Steamed or Roasted Veggies: Broccoli, cauliflower, green beans, or Brussels sprouts all make easy sides when you want a little extra green on the plate.
- Simple Salad: Something crisp and fresh is a nice contrast to the rich sauce. My garden salad keeps things light and fresh while letting the curry stay the star.

How to Store & Reheat Pumpkin Chicken Curry
This is one of those meals that makes a pretty great lunch the next day, so don’t be mad if you end up with leftovers.
- Fridge: Let the curry cool, then store it in an airtight container in the fridge for up to 4 days.
- Freezer: Freeze in an airtight, freezer safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheating: Warm gently in a skillet or saucepan over medium low heat, stirring occasionally. If the sauce has thickened up in the fridge, add a splash of coconut milk or chicken broth to loosen it back up.
