Question 1

Should you stir risotto constantly?

Accepted Answer

Nope! Risotto needs regular stirring, but you don’t have to stand there stirring nonstop. Give it a good stir as the broth absorbs, then keep checking in on it. This helps the Arborio rice release its starch without turning the whole process into an arm workout.

Question 2

What is the secret to a good risotto?

Accepted Answer

There isn’t one magic secret. Keep your broth warm, add it gradually, stir regularly, and pay attention to the rice rather than relying solely on the clock. The grains should be tender with a slight bite in the center, and the finished risotto should be loose enough to slowly spread across the plate.

Question 3

What mushrooms are best for risotto?

Accepted Answer

Cremini mushrooms are my pick for this recipe because they’re easy to find, affordable, and have a deeper, earthier flavour than white button mushrooms. That said, white button mushrooms absolutely work in risotto too. I use them in my mushroom risotto, which is a great option when you want the mushrooms to be the star of the show. For this version, I prefer cremini because their deeper flavour stands up especially well to the slightly sweet butternut squash.
