Question 1

Can I use fresh pumpkin instead of canned pumpkin purée?

Accepted Answer

Yes, as long as it’s cooked and blended until smooth. Fresh pumpkin purée can contain more moisture than canned, though, so the consistency of your pancake batter may vary slightly. Whether fresh or canned, make sure you’re using pure pumpkin purée and not pumpkin pie filling.

Question 2

Can I make the pancake batter ahead of time?

Accepted Answer

I recommend making the batter right before cooking. The baking powder and baking soda start working once the wet and dry ingredients come together, so letting the batter sit overnight can affect how fluffy the pancakes turn out. For an easier morning, measure the dry ingredients the night before and mix everything together when you’re ready to cook.

Question 3

Can I make these pumpkin pancakes without the bourbon?

Accepted Answer

Absolutely. The bourbon is only used in the maple syrup, not the pancake batter. Simply serve the pancakes with warm pure maple syrup instead, along with the toasted pecans or any other toppings you like.
