PART
These crispy white beans can be made in the oven or air fryer, depending on whether you want a creamier center or extra crunch.
These crispy white beans are what happens when buttery cannellini beans meet high heat and a little patience. Golden, crackly outside, creamy in the middle, and seriously hard to stop snacking on.
Roasted until golden and blistered, these crispy white beans have crunchy edges, creamy centers, and enough savoury crunch to steal the spotlight from whatever you serve them with. They work as a snack, salad topper, soup garnish, or tossed over grain bowls when dinner needs a little extra crunch.

Even better, you can make them in the oven or air fryer depending on how crunchy you want them. And if you love snacky toppings like crispy chickpeas or salt and vinegar almonds, these roasted white beans fit right in.
Why These White Beans Actually Get Crispy
Most roasted white bean recipes skip the details that actually create crisp texture. These few small steps make all the difference between soft beans and truly crispy roasted white beans.
Dry the Beans Really Well
- Moisture creates steam, which prevents crisping
- Dry the beans thoroughly after rinsing
- Letting them air dry for 10 to 20 minutes helps even more
Don’t Overcrowd the Pan
- Crowded beans steam instead of roast
- Spread them in a single layer with space between each bean (as best as possible)
- Better airflow creates crispier edges and more even browning
Why Seasoning Happens After Roasting
- Salt added too early can pull moisture to the surface
- Roasting first helps the beans blister and crisp properly and prevents the seasonings from burning
- Tossing with seasoning after roasting keeps the texture crunchier
- Warm beans hold onto spices and seasonings better anyway

Best White Beans for Roasting
Cannellini beans are the best choice for crispy roasted white beans. They’re sturdy enough to hold their shape in the oven or air fryer, but still turn soft and creamy in the middle once crisped up on the outside.
Navy beans also work well if you want a smaller, crunchier bite, while butter beans give you a creamier center with slightly less overall crispiness because of their size.
No matter which variety you use, canned beans should always be rinsed, dried really well, and roasted in a single layer for the best texture.
Oven vs Air Fryer Crispy White Beans
Both methods work well, but they give you slightly different results.
Oven Method
- More even roasting and browning
- Crisp outside with creamier centers
- Easier to control and less likely to dry out
- Best option for larger batches
Air Fryer Method
- Crisps faster with a slightly crunchier texture
- Great for small batches and quick snacking
- Needs shaking every few minutes for even crisping
- Can dry out quickly if overcooked

Ways to Use Crispy White Beans
- Scatter them over soups like creamy pumpkin soup for extra crunch and texture
- Toss them onto salads for texture, especially simple Mediterranean-style salads or Caesar salads
- Add them to grain bowls with roasted veggies and greens, especially cozy bowls like this sweet potato halloumi bowl.
- Use them as a crunchy topping for pasta dishes that need a little texture
- Add them to snack boards alongside olives, cheeses, and dips
These crispy beans also pair really well with other savoury snack recipes like candied cashews or these lemon almonds when you want something crunchy without reaching for chips.

Flavour Variations
- Garlic parmesan white beans. Sprinkle the warm beans with garlic powder, finely grated parmesan, and a little black pepper right after roasting. Salty, savoury, and dangerously snackable.
- Rosemary parmesan white beans. Toss the warm beans with chopped rosemary, parmesan, and a pinch of Italian seasoning for a savoury, herby version that feels a little extra cozy.
- Lemon pepper crispy white beans. Finish the beans with lemon zest and cracked black pepper for a brighter, fresher flavour. These work really well scattered over salads or Mediterranean-style bowls.
- Ranch seasoned white beans. Toss them with my homemade ranch seasoning while they’re still warm for a tangy, herby snack situation that disappears fast.
- Everything bagel style. Add everything bagel seasoning after roasting for extra crunch and savoury flavour. Great for snacking straight from the pan or topping creamy soups.
- Turn up the heat. If you like things spicy, finish the beans with cayenne, hot smoked paprika, my easy cajun seasoning, or my homemade blackened seasoning for extra kick and crunch.

Storage Tips
- Crispy roasted white beans are best the day they’re made while the edges are still crackly and crisp
- Let them cool completely before storing so trapped steam doesn’t soften them
- Store leftovers loosely covered at room temperature for a few hours, or refrigerate for up to 3 days
- Reheat in the oven or air fryer for a few minutes to bring back the crunch
- The air fryer works especially well for reheating crispy white beans without drying out the centers

Crispy White Beans (Oven + Air Fryer)
Video
Ingredients
- 1 (15oz) can white beans* (drained and rinsed)
- 1.5 tbsp extra virgin olive oil
- ½ tsp salt (plus more to taste)
- ¼ tsp black pepper
Optional Seasonings (Add After Roasting)
- ½ tsp garlic powder
- ½ tsp smoked paprika
- pinch of chili flakes
- lemon zest
Instructions
Oven Method
- Preheat the oven to 425°F and place a large baking sheet inside while it heats.
- Drain and rinse the beans well, then pat them completely dry with paper towels or a clean kitchen towel. For even crispier beans, let them air dry for 10 to 20 minutes.
- Add the dried beans to a bowl and toss with the olive oil only.
- Spread them onto the hot baking sheet in a single layer with space between the beans.
- Roast for 15 minutes, then shake the pan. Don’t worry if some of the beans split or burst open at this stage. That’s completely normal and actually helps create extra crispy edges and texture. Return to the oven and roast for another 10 to 20 minutes, or until the beans are golden, blistered, and crispy on the outside. While still warm, toss with salt, pepper, and any optional seasonings before serving.
Air Fryer Method
- Preheat the air fryer to 400°F.
- Dry the beans thoroughly, then toss with olive oil only.
- Add the beans to the air fryer basket in a single layer without overcrowding.
- Air fry for 12 to 15 minutes, shaking the basket every 5 minutes, until crispy and golden.
- Toss with salt and any additional seasonings while still warm and serve immediately.
