I have to admit – I love cod. Baked cod. Steamed cod. Cod of any kind. But this broiled cod seriously tops this list. It’s just THE BEST.
WHEN THE WORLD IS GOING CRAZY: GRAB COD
The world is going crazy right now. I mean, someone pinch me. You mean there’s no toilet paper left in the last 4 stores I went to and that’s all I actually (seriously) need right now?!?! This is when grocery shopping and meals gotta step their game up. I ain’t waiting an hour in line just to make the same ol’ pasta dish I made last week, you know what I’m saying? Although, for some reason, pasta is the first thing we chose to so-called stockpile (can’t believe I’m even admitting that) so there WILL be lots of pasta eating in this house in the near future. (Helllllllo, pasta with cauliflower and bacon!)
I gotta admit – it takes a loooong time for something to hit me. I can’t get over the paranoid shoppers hoarding groceries as if the world is actually going to end. You seriously can’t move around the stores any more than I remember being able to move during any Steve Aoki set back in the day. I (shamefully) admittedly joined in on the madness but ONLY cause I felt like if I didn’t, nothing would be left for me. But I took what I needed and went on about my week (dreading ever entering another grocery store for the next month…)
I couldn’t help but laugh peering in carts that belonged to panicked people. If the world was actually going to end – if this was actually an apocalypse or your last time grocery shopping – what would make it into your cart? Cod, among other things, was a definite must for me. It’s easy, sooo tasty and you probably have most of the ingredients in your pantry pre-chaos which is an automatic plus. It can be frozen and taken out if you ever find yourself in a troubled situation…like not being able to leave the house.

BROILED COD
Ingredients
- 2 Wild-Caught Cod Fillets
- 3 tsbp Ghee or Butter
- 2 tbsp Soy Sauce, Tamari, or Coconut Aminos
- 1 tbsp Maple Syrup or Honey
- 1 tbsp Sriracha optional, for heat
- Juice of 1 lime
- Salt and Pepper to taste
Instructions
- Turn the broiler on to HIGH.
- Sprinkle the cod with a generous amount of salt and pepper.
- Mix the rest of the ingredients in a bowl and brush it evenly over both sides of the fish.
- Squeeze the juice of one lime over the top of the fish.
- Place fish under the broiler for 8-9 minutes or until the edges are crispy and the flesh is easily flaked with a fork. Enjoy!
