Ingredients
  

  • 1 (15oz) can white beans* (drained and rinsed)
  • 1.5 tbsp extra virgin olive oil
  • ½ tsp salt (plus more to taste)
  • ¼ tsp black pepper

Optional Seasonings (Add After Roasting)

  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • pinch of chili flakes
  • lemon zest

Oven Method

  1. Preheat the oven to 425°F and place a large baking sheet inside while it heats.
  2. Drain and rinse the beans well, then pat them completely dry with paper towels or a clean kitchen towel. For even crispier beans, let them air dry for 10 to 20 minutes.

  3. Add the dried beans to a bowl and toss with the olive oil only.

  4. Spread them onto the hot baking sheet in a single layer with space between the beans.

  5. Roast for 15 minutes, then shake the pan. Don’t worry if some of the beans split or burst open at this stage. That’s completely normal and actually helps create extra crispy edges and texture. Return to the oven and roast for another 10 to 20 minutes, or until the beans are golden, blistered, and crispy on the outside. While still warm, toss with salt, pepper, and any optional seasonings before serving.

Air Fryer Method

  1. Preheat the air fryer to 400°F.
  2. Dry the beans thoroughly, then toss with olive oil only.
  3. Add the beans to the air fryer basket in a single layer without overcrowding.
  4. Air fry for 12 to 15 minutes, shaking the basket every 5 minutes, until crispy and golden.
  5. Toss with salt and any additional seasonings while still warm and serve immediately.

Notes

Cannellini beans work best because they stay creamy inside while getting crisp and golden outside.
Dry the beans really well before roasting. Any leftover moisture will steam the beans instead of crisping them.
Removing loose skins is optional. Some people prefer a smoother texture, but leaving them on creates extra crispy bits and crunch.
Don’t overcrowd the pan or air fryer basket. Space = crispiness.
The beans are ready when the skins look golden and blistered and they sound lightly crisp when shaken.
These are best enjoyed fresh, but a quick few minutes in the air fryer or oven brings the crunch back fast.
