For this recipe, I use Russets around 7 ounces each, but you can use smaller or larger potatoes depending on what you have. The most important thing is choosing potatoes that are roughly the same size so they cook at a similar rate. Just keep in mind that larger potatoes will need more time in the oven. A light coating of oil and a generous sprinkle of kosher salt help turn those sturdy skins crisp and nicely seasoned.
How to Bake Potatoes Without Foil
There’s not much to baking potatoes without foil, but a few small details make a big difference when you’re after crispy skin and a fluffy center. Here’s what to keep in mind before they hit the oven.
Start With Dry Potatoes

How to Tell When It’s Done
A baked potato is ready when it gives easily when gently squeezed with an oven mitt and a thin knife or skewer slides through the center without resistance. For a more precise check, an instant-read thermometer inserted into the center should read around 205°F to 210°F. That’s a handy extra cue when you want to make sure the inside is soft and fluffy before pulling it from the oven.

How to Get Crispy Skin on a Baked Potato

Instructions
- Preheat the oven to 425°F. Place a wire rack over a rimmed baking sheet.
- Scrub the potatoes well, then dry them very thoroughly with a clean kitchen towel. Pierce each potato several times all over with a fork.
- Rub the potatoes with the oil, making sure the skins are lightly and evenly coated. Sprinkle all over with kosher salt and black pepper, if using. Arrange them on the wire rack, leaving space between each one so hot air can circulate around the skins.
- Bake for 40 to 50 minutes, or until the skins are crisp and the potatoes are tender all the way through. Begin checking for doneness around the 40 minute mark.
- Remove from the oven and cut a slit lengthwise across the top of each potato. Gently squeeze the ends toward the center to open it up and release the steam.
- Fluff the centers with a fork and serve immediately with your favourite toppings.
