Roasted Pumpkin Recipe

Jump to Recipe

This roasted pumpkin recipe is one of my favourite ways to turn a fresh pumpkin into something savoury. The wedges come out tender in the middle, caramelized around the edges, and packed with warm, herby flavour.

Sugar pie pumpkin is cut into thick wedges, brushed with olive oil, and seasoned with pumpkin spice, thyme, salt, and pepper before roasting until golden and soft. It’s an easy fall side dish that works just as well with a weeknight dinner as it does alongside your Thanksgiving spread.

And if you have another pumpkin waiting to be used, my easy pumpkin soup with fresh pumpkin is a cozy way to put it to work.

What You’ll Need for Oven Roasted Pumpkin

You only need a fresh pumpkin, olive oil, and a handful of seasonings to make these roasted pumpkin wedges. Here’s what you’ll need:

How to Roast Pumpkin in the Oven

The full step-by-step instructions are in the recipe card below, but these tips will help you get tender, evenly cooked pumpkin with nicely caramelized edges every time.

  • Start with a sharp knife. Pumpkin can be awkward to cut, so a sturdy, sharp chef’s knife makes a big difference. Place a clean kitchen towel underneath the pumpkin to help keep it from slipping while you cut.
  • Keep the wedges similar in size. Aim for wedges about 1½ inches thick so they cook at roughly the same rate. They don’t have to be picture perfect, just reasonably even.
  • Remove the stringy fibres. After scooping out the seeds, scrape away any tough, stringy bits still clinging to the flesh. They can become hard and unpleasant as the pumpkin roasts.
  • Coat the flesh well. Brush or rub the olive oil and seasonings over all of the exposed flesh. This helps prevent dry spots and gives you better browning and flavour.
  • Give the wedges some space. Arrange them in a single layer rather than crowding the pan so they roast instead of steaming.
  • Flip as they roast. Each wedge has three sides, and giving each one time against the hot baking sheet helps the pumpkin brown and caramelize more evenly.

The pumpkin spice and thyme combo gives these wedges a warm, savoury flavour with just a hint of sweetness, but pumpkin plays well with all kinds of seasonings. Try one of these variations:

  • Spicy: Add smoked paprika, cayenne pepper, or red pepper flakes for a little heat. Also give my homemade BBQ dry rub or my blackened seasoning a try.

These roasted pumpkin wedges make an easy fall side dish for everything from weeknight dinners to Thanksgiving. The warm spices work especially well with roasted meats, hearty mains, and other seasonal sides.

Serve them alongside slow cooker roast beef or oven roasted turkey drumsticks for a simple dinner. For a holiday spread, pair them with garlic mashed potatoes and honey roasted Brussels sprouts.

They’re also great straight off the pan with an extra pinch of salt and some fresh herbs.

Fridge: Store leftover roasted pumpkin in an airtight container in the fridge for up to 5 days.

Reheating: For the best texture, reheat the wedges in a 350°F oven until warmed through. An air fryer works well, too, especially if you want to bring back some of those caramelized edges. The microwave is quickest, but the pumpkin will be softer.

Small cooking pumpkins such as sugar pie pumpkins are a great choice for roasting. They have dense, flavourful flesh and are much easier to cut and handle than large carving pumpkins. Kabocha pumpkin also works well. Avoid big jack-o’-lantern pumpkins, which tend to be more watery and stringy.

For this roasted pumpkin recipe, yes. Leaving the skin on makes the wedges easier to handle and helps them hold their shape while roasting. Once cooked, the pumpkin flesh should be soft enough to easily pull away from the skin before eating.

The pumpkin is ready when the flesh is fork tender and soft through the centre, with golden, caramelized areas where the wedges have been in contact with the baking sheet. For these 1½-inch wedges, that takes about 45 minutes at 400°F.

  7. Roast for 45 minutes, turning the wedges every 15 minutes so all three sides have a chance to make contact with the baking sheet. Start skin-side down, turn onto one cut side after 15 minutes, then onto the other cut side after another 15 minutes. The pumpkin is ready when the flesh is fork tender with golden, caramelized edges.

Notes

Choose a small cooking pumpkin. Sugar pie or kabocha are good options. Skip large carving pumpkins, which tend to be more watery and stringy.
Save the seeds! Don’t toss them while prepping. Turn them into crispy roasted pumpkin seeds for an easy snack.
Keep the skin on for roasting. It helps the wedges hold their shape and is easy to pull away from the tender flesh before eating.
Give the wedges room. Use a large enough baking sheet to keep them in a single layer without crowding, which helps them caramelize instead of steam.
Season again after peeling, if needed. A little extra salt on the newly exposed side of the pumpkin makes a big difference.
Store leftovers for up to 5 days. Keep them refrigerated in an airtight container and reheat in the oven or air fryer for the best texture.
