It’s funny, but every time we travel outside of Canada for more than a week or two, the first thing I start craving is a good ol’ Caesar salad. I just love the mix of creamy Caesar dressing, crunchy seasoned croutons, crispy bacon, and freshly grated (or shaved) parmesan cheese. I mean, can you really blame me?

But it’s summer, and that means anything goes when it comes to salads! Dare I say it? Your beloved Caesar salad just got a major upgrade. This pasta salad has all the classic flavours of a Caesar, with the fun twist of pasta added in. Honestly, what’s not to love?!

I mean, as a salad-loving girl, I can allllready eat salads all day, everyday (especially in the summer). But when they’re this good?! Even my four-year-old niece asks for seconds — and you know that’s saying something!

HOW TO MAKE A CAESAR PASTA SALAD (KEY TIPS)

  • Use fresh romaine. Crisp, fresh leaves are essential for texture and contrast against the creamy dressing.

  • Use slightly cooled pasta. Cook your pasta al dente, then rinse briefly with cold water or let it cool slightly before tossing with the dressing. This keeps it from getting mushy. EXTRA TIP: Toss it with a drizzle of olive oil to prevent it from sticking while you prepare the remaining ingredients.

  • Crisp bacon properly. Follow my mess-free broiling method, or pan-fry until just crispy. Let it drain on paper towels before adding to the salad.

  • Toss pasta and dressing while warm. If you like a slightly creamier coating, toss pasta with the tahini Caesar dressing while it’s still a little warm so it absorbs more flavour.

  • Add croutons last. To keep them crunchy, add them just before serving. Sourdough croutons add a next-level crunch, but regular or store-bought work too.

  • Toss thoroughly but gently. Use a large mixing bowl and a pair of tongs or salad spoons to gently toss the romaine, pasta, dressing, croutons, bacon, and parmesan. Make sure every bite gets a little bit of everything without bruising the lettuce or breaking up the croutons too much.

Ingredients
  

  • 7 oz. (~2 cups cooked) Short-Cut Pasta (like rotini, cavatappi, or penne)
  • 6 slices Bacon* cooked until crispy and crumbled
  • cup Freshly Grated or Shaved Parmesan
  • 1.5 cups Sourdough Croutons (homemade or store-bought—see note)

Instructions
 

  • Boil pasta in salted water according to package instructions until al dente. Drain and rinse under cool water to stop the cooking. Let it cool slightly while you prep the rest. Optional: Drizzle with a touch of olive oil to prevent sticking.
