Pumpkin Purée
Make sure you’re using 100% pure pumpkin purée, not pumpkin pie filling. The pumpkin gets mixed right into the meatballs, where it adds moisture to the lean turkey along with a subtle earthy sweetness. You’ll taste the pumpkin, but it doesn’t overpower everything else or make these meatballs sweet.
The Seasonings

The Secret to Juicy, Tender Turkey Meatballs
Ground turkey has a reputation for drying out, but a few small things make a big difference here. The pumpkin purée adds moisture right from the start, while the panko helps absorb and hold onto that moisture so the meatballs stay tender and hold their shape.
The mixture should be soft and slightly tacky but still scoopable. Resist the urge to keep adding breadcrumbs just to make it easier to handle. If it truly won’t hold its shape, add more panko just one tablespoon at a time.
Just as important, mix the turkey only until everything comes together and gently roll the meatballs without packing them tightly. Overworking or compacting the mixture can leave you with dense meatballs. And finally, don’t overbake them. Turkey is done at 165°F internally, so an instant-read thermometer is your best friend here.

What to Serve With Pumpkin Turkey Meatballs

Storage and Reheating
Store leftover pumpkin turkey meatballs in an airtight container in the fridge for up to 4 days. They also freeze well once fully cooled. Transfer them to a freezer safe container or bag and freeze for up to 3 months, then thaw overnight in the fridge before reheating.
To keep the turkey from drying out, reheat the meatballs gently until warmed through. The microwave works well for a quick lunch, or you can cover them and warm them in a 350°F oven until heated through.

Baked Pumpkin Turkey Meatballs
Ingredients
- 1 pound (454 g) ground turkey (preferably not extra lean)
- ½ cup 100% pure pumpkin purée
- ½ cup finely grated Parmesan cheese
- ½ cup panko breadcrumbs
- 1 large egg
- 2 cloves garlic (finely minced)
- 2 tbsp finely chopped fresh sage
- 1 tbsp finely chopped fresh parsley
- 1 tsp fresh thyme leaves
- 1 tsp salt
- ½ tsp freshly cracked black pepper
- ½ tsp onion powder
- ¼ tsp red pepper flakes (optional)
- 1 tbsp extra virgin olive oil (plus more as needed for greasing or brushing)
Instructions
- Preheat to 400°F. Line a large baking sheet with parchment paper or lightly grease it with olive oil.
- Add the pumpkin purée, Parmesan, panko, egg, garlic, sage, parsley, thyme, salt, pepper, onion powder and red pepper flakes to a large bowl. Stir until well combined.
- Add the ground turkey and gently mix just until evenly incorporated. Do not overmix. The mixture should be soft and slightly tacky, but still scoopable.
- Using a small cookie scoop, portion the mixture into 1½-tablespoon meatballs. Gently roll just enough to round them without tightly packing the mixture. You should get about 18–20 meatballs.
- Arrange the meatballs on the prepared baking sheet, leaving a little space between each one. Lightly brush or drizzle the tops with olive oil to help them brown.
- Bake for 18–22 minutes, or until lightly golden and the centres reach 165°F on an instant-read thermometer. Avoid overcooking so they stay juicy.
- Let the meatballs rest for 5 minutes. Finish with extra Parmesan and chopped parsley or sage, if desired.
