If crispy, salty potato skin is your favourite part, this no foil baked potato has your name all over it. Skip the foil, crank up the oven, and let that skin do its thing.

Baking a potato without foil gives you the best of both worlds: a crisp, seasoned exterior and a soft, fluffy center ready to load up with butter, sour cream, cheese, chives, or whatever you’re craving. It’s simple, requires just a handful of ingredients, and works just as well alongside dinner as it does piled high with toppings for the main event.

Baking potatoes without foil is the secret to getting that crispy, salty skin that makes a good baked potato so much better. Foil traps steam and moisture around the potato as it cooks, which keeps the skin soft. Leaving it unwrapped lets that moisture escape while the dry heat of the oven works its magic on the outside.

Meanwhile, the inside cooks up soft and fluffy, giving you that classic baked potato contrast: crisp on the outside, pillowy in the middle. So, while you can wrap baked potatoes in foil, there’s really no need to when crispy skin is the goal.

Russet potatoes are my go to for a classic baked potato, especially when crispy skin and a fluffy center are the goal. Their thick, sturdy skins crisp up beautifully in the oven, while the starchy flesh inside becomes light and fluffy as it bakes.

For this recipe, I use Russets around 7 ounces each, but you can use smaller or larger potatoes depending on what you have. The most important thing is choosing potatoes that are roughly the same size so they cook at a similar rate. Just keep in mind that larger potatoes will need more time in the oven. A light coating of oil and a generous sprinkle of kosher salt help turn those sturdy skins crisp and nicely seasoned.

Once the potatoes are clean and dry, lightly coat the entire skin with oil, then season generously with kosher salt. The oil helps the exterior crisp and gives the salt something to cling to, while the salt adds that savoury crunch you want in every bite.

Give the potatoes a little breathing room in the oven, too. I like placing them on a wire rack set over a baking sheet so the hot air can circulate around all sides rather than having the bottoms sit flat against the pan.

And most importantly, leave the foil in the drawer! Keeping the potatoes uncovered allows the skins to roast in the dry oven heat rather than steam, giving you a crispy baked potato skin that’s actually worth eating.

Keep it classic with butter, sour cream, shredded cheddar, chives, or crispy bacon, or pile on heartier toppings like homemade chili, sautéed mushrooms, or broccoli and cheese to turn your baked potato into a meal.

Serving them as a side? They’re right at home next to oven baked pork chops, reverse seared steak, or parmesan crusted fish. With that crispy, salty skin and fluffy middle, you really don’t need much else to make them shine.

Let leftover baked potatoes cool, then store them in an airtight container in the fridge for up to 4 days. For the best texture, reheat them in the oven or air fryer at 400°F until hot all the way through. This gives the skin a chance to crisp back up while warming the fluffy center.

The microwave works when you’re short on time, but the skin will soften, so stick with the oven when that crispy exterior is worth the wait.

Absolutely! You don’t need to wrap baked potatoes in foil, and if crispy skin is the goal, you’re actually better off without it. No Foil Baked Potato With Crispy Skin

This no foil baked potato has crispy, salty skin and a soft, fluffy center, all thanks to a simple oven method that skips the foil.

Ingredients
  

  • 4 russet potatoes (similar in size)
  • 1 tbsp extra virgin olive oil or avocado oil
  • 1 tsp salt (plus more as needed)
  • freshly cracked black pepper (optional)
  • your favourite baked potato toppings (for serving)

Instructions
 

  1. Preheat the oven to 425°F. Place a wire rack over a rimmed baking sheet.
  2. Scrub the potatoes well, then dry them very thoroughly with a clean kitchen towel. Pierce each potato several times all over with a fork.

  3. Rub the potatoes with the oil, making sure the skins are lightly and evenly coated. Sprinkle all over with kosher salt and black pepper, if using. Arrange them on the wire rack, leaving space between each one so hot air can circulate around the skins.

  4. Bake for 40 to 50 minutes, or until the skins are crisp and the potatoes are tender all the way through. Begin checking for doneness around the 40 minute mark.

  5. To check for doneness, gently squeeze each potato with an oven mitt. It should give easily, and a thin knife or skewer should slide into the center without resistance. For a more precise check, the internal temperature should be around 205°F to 210°F.
  6. Remove from the oven and cut a slit lengthwise across the top of each potato. Gently squeeze the ends toward the center to open it up and release the steam.
  7. Fluff the centers with a fork and serve immediately with your favourite toppings.

Notes

Use Russet potatoes. Their starchy flesh bakes up fluffy while the sturdy skin gets nice and crisp.
Choose similar-sized potatoes. They’ll finish baking around the same time. Larger potatoes may need longer than the suggested range.
Dry them really well. Any moisture left on the skin works against crisping, so don’t rush this step after scrubbing.
Don’t skip the oil and salt. A light coating of oil and kosher salt gives the skin its crisp, savoury finish.
Check the potato, not just the clock. It’s done when it gives easily when squeezed and a knife or skewer slides through the center without resistance.
Make them your own. Serve with your favourite toppings like butter, sour cream, shredded cheddar, chives, bacon, or whatever you’re craving.
Store leftovers properly. Refrigerate cooled potatoes in an airtight container for up to 4 days. Reheat in a 400°F oven for the best shot at reviving that crispy skin.
