Canned pineapple can work in a pinch, but make sure it’s packed in juice rather than syrup and drain it really well first. - Corn: Fresh or frozen corn both work beautifully. The important part is getting a little char on those kernels. That quick bit of browning brings out the corn’s sweetness while adding a toasty, savoury flavour that balances the pineapple.
- Jalapeño: This is where you get to control the heat. Remove the seeds and membranes for a milder salsa, or leave some behind if you like more of a kick.

Instructions
