These lemon pepper chicken drumsticks are all about crispy golden skin, juicy chicken and bold, fresh lemon pepper flavour. They’re baked right in the oven, with no store bought lemon pepper seasoning needed.
Fresh lemon zest and plenty of cracked black pepper give these drumsticks that bright, punchy flavour you want, while a little butter brings the savoury richness. The best part? The fresh lemon juice goes on after baking, so you get that pop of citrus without sacrificing the crispy skin we worked so hard for.
They’re easy enough for a weeknight but absolutely worthy of a big ol’ plate with my Greek roasted lemon potatoes and some sautéed broccoli on the side. Or, when I’m craving something fresh and crunchy to balance out those buttery, peppery chicken legs, this spinach and blue cheese salad fits right in.

✳︎ Why You’ll Love These Lemon Pepper Chicken Drumsticks
- That crispy skin. A hot oven and one little pantry trick help these baked drumsticks get beautifully golden and crisp without frying.
- Fresh lemon pepper flavour. We’re building it ourselves with real lemon zest and cracked black pepper, so there’s no bottled seasoning blend in sight.
- Juicy where it counts. The skin gets crisp while the dark meat underneath stays tender and juicy.
- Big flavour, easy prep. A handful of everyday ingredients does all the heavy lifting here.
- Weeknight dinner material. Add potatoes, veggies or a crisp salad and dinner is pretty much handled.
Ingredient Notes

You only need a handful of everyday ingredients to make these baked lemon pepper chicken drumsticks, but a few are worth a closer look.
The Homemade Lemon Pepper Flavor
No store bought lemon pepper seasoning here! Fresh lemon zest and cracked black pepper are the stars, with garlic powder, onion powder and paprika rounding everything out with a little savoury depth. Fresh zest gives the chicken that unmistakable lemony punch without adding extra moisture to the skin before it hits the oven.
And don’t skip the baking powder. A small amount helps dry out the surface of the chicken as it bakes, giving you that golden, crispy skin without any frying.
Fresh Lemon vs. Bottled Lemon Juice
Fresh lemon really makes a difference in this recipe since we’re using both the zest and the juice. The zest goes onto the drumsticks before baking for concentrated citrus flavour, while the juice gets squeezed over them at the very end. That way, you get a fresh, bright finish without soaking all that beautifully crisp skin before it has a chance to brown.
Chicken Drumsticks or Chicken Legs?
Technically, a drumstick is just the lower portion of a whole chicken leg, while a whole leg includes both the thigh and drumstick. This recipe is written specifically for drumsticks, but the same fresh lemon pepper flavours work beautifully on baked lemon pepper chicken legs, too. Just keep in mind that whole chicken legs are larger, so they’ll need additional cooking time.
Tips for Crispy Baked Drumsticks
- Pat them really dry. Use paper towels to remove as much moisture from the chicken skin as possible before seasoning. Less moisture means a better shot at that golden, crispy finish.
- Give them some breathing room. Leave space between each drumstick on the pan. Crowding traps steam, and steamed chicken skin is definitely not what we’re going for!
- Don’t skip the baking powder. Just a small amount helps dry out the surface of the chicken as it bakes, encouraging crispier skin without frying.
- Keep the heat high. Baking the drumsticks at 425°F helps the skin brown and crisp while keeping the meat underneath nice and juicy.
- Look beyond the clock. You want deeply golden, crisp skin and an internal temperature of at least 165°F. For even more tender, juicy dark meat, I like taking drumsticks closer to 175°F to 185°F.

What to Serve With Lemon Pepper Chicken Drumsticks
These crispy, citrusy drumsticks play well with all sorts of sides, so you can easily take dinner in a lighter or more comfort food direction.
- Roasted asparagus: Keep things fresh and easy with a simple roasted veggie that won’t compete with the bright lemon pepper flavour.
- Glazed carrots: A little sweetness is the perfect contrast to all that zesty lemon and cracked black pepper.
- Spinach mashed potatoes: Go the cozy route with creamy mashed potatoes that can hold their own next to those juicy chicken legs.
- Vinegar coleslaw: Its tangy crunch makes a refreshing contrast to the buttery, crispy chicken skin.

Crispy Lemon Pepper Chicken Drumsticks
Video
Ingredients
- 3 pounds chicken drumsticks (about 10 to 12 drumsticks)
- 1 tbsp baking powder
- 1 tsp salt
- 2 tsp freshly cracked black pepper
- 1 tbsp fresh lemon zest
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- 2 tbsp extra virgin olive oil
- 1 tbsp butter (melted)
- 1-2 tbsp fresh lemon juice (for finishing)
- fresh thyme (for garnish, optional)
- lemon wedges (for serving, optional)
Instructions
- Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper or foil and place an oven safe wire rack on top, if using.
- Pat the drumsticks very dry with paper towels. Removing as much surface moisture as possible helps the skin get crispy.
- In a small bowl, combine the baking powder, kosher salt, black pepper, lemon zest, garlic powder, onion powder and paprika.
- Add the chicken to a large bowl. Drizzle with the olive oil and melted butter and toss to coat. Sprinkle the seasoning mixture over the drumsticks and toss again until evenly coated.
- Place the drumsticks on the prepared baking sheet with space between each one so they roast rather than steam.
- Bake for 40 to 45 minutes, flipping halfway through, until the skin is deeply golden and crispy. Chicken is safe at 165°F, but drumsticks become especially tender and juicy around 175°F to 185°F.
- Remove the drumsticks from the oven and immediately squeeze the fresh lemon juice over top. Garnish with fresh thyme and serve with lemon wedges, if desired.
