This creamy lemon chicken gnocchi has everything I want in a cozy skillet dinner: juicy golden chicken, pillowy gnocchi, plenty of garlic and a silky Parmesan sauce brightened up with fresh lemon. Rich, creamy, fresh and seriously hard to put down.

I mean, give me a skillet full of gnocchi swimming in a creamy, garlicky sauce and I’m already there. But add juicy bites of chicken, freshly grated Parmesan, a handful of spinach and that fresh lemony finish? Now we’re talking. The lemon cuts through all that creamy goodness just enough, so it’s cozy and comforting without feeling like a total gut bomb.

And the best part is there’s no separate pot of gnocchi to deal with. Those little potato pillows cook right in the sauce, which means more flavour, fewer dishes and dinner on the table in about 40 minutes. You only need a handful of everyday ingredients to make this creamy lemon chicken gnocchi, but a few of them really make the dish. Here’s what to know before you get cooking:

This lemon garlic chicken gnocchi is pretty darn good as written, but there’s definitely some room to switch things up depending on what you have kicking around.

Store leftover chicken gnocchi in an airtight container in the fridge for up to 3 days. The gnocchi will continue soaking up the sauce as it sits, so don’t be surprised if things look quite a bit thicker the next day.

Reheat leftovers gently on the stovetop over low heat or in the microwave in short intervals. Add a splash of chicken broth or heavy cream as needed to loosen the sauce and bring back that silky consistency.

I don’t recommend freezing this one. Creamy sauces can separate once frozen and thawed, and the gnocchi can become overly soft. This is definitely a leftovers-from-the-fridge situation!

This recipe was developed specifically with shelf-stable potato gnocchi, which cooks directly in the sauce. Refrigerated or frozen gnocchi may cook differently and release or absorb a different amount of moisture, so the timing and amount of liquid may need adjusting.

Absolutely. It’s a great shortcut! Skip the chicken browning step and add chopped or shredded rotisserie chicken near the end, along with the spinach and lemon. You only want to warm it through so it stays nice and juicy.

You can, but it’s at its best straight from the skillet. The gnocchi continues absorbing the creamy sauce as it sits, so the texture will be thicker after refrigerating. If you do make it ahead, reheat it gently with a splash of chicken broth or cream to loosen everything back up.

Heavy cream gives the sauce its rich, silky texture and is the most reliable option for this recipe. A lower fat dairy substitute may work, but the sauce won’t be quite as rich and can be more prone to separating, especially once the lemon juice is added.

It was most likely cooked for too long. Gnocchi should be tender and pillowy but still have a slight chew. Start checking it toward the beginning of the 5 to 7 minute cooking window rather than relying on time alone, since brands can cook a little differently.

Too much heat or pre-shredded Parmesan are usually the culprits. Reduce the heat to low before gradually stirring in freshly grated Parmesan, and don’t let the sauce aggressively boil once the cheese has been added.

Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 1 medium shallot (finely diced)
  • 4 cloves garlic (minced)
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 (16 ounce) package shelf-stable potato gnocchi
  • ¾ cup freshly grated Parmesan cheese
  • Zest of 1 large lemon
  • 2 tbsp fresh lemon juice (plus more to taste)
  • 2 cups baby spinach
  • 2 tbsp fresh parsley (chopped)

Instructions
 

  1. Pat the chicken dry, then season with salt, pepper and Italian seasoning.

  2. Heat the olive oil in a large, deep skillet over medium high heat. Add the chicken in a single layer and cook for 5 to 6 minutes, turning occasionally, until golden and cooked through to 165°F. Transfer to a plate.

  3. Reduce the heat to medium. Add the butter and shallot and cook for about 2 minutes, until softened. Add the garlic and cook for 30 seconds, until fragrant.

  4. Pour in the chicken broth, scraping up the browned bits from the bottom of the skillet. Stir in the heavy cream and bring to a gentle simmer.

  5. Add the uncooked gnocchi directly to the skillet. Gently simmer for 5 to 7 minutes, stirring occasionally, until tender and the sauce has slightly thickened.

  6. Reduce the heat to low. Gradually stir in the Parmesan until melted and the sauce is smooth and creamy.

  7. Stir in the lemon zest, lemon juice, spinach and cooked chicken. Cook for 1 to 2 minutes, just until the spinach wilts and the chicken is warmed through.

  8. Taste and adjust with additional lemon juice, salt or pepper as needed. Finish with parsley, extra Parmesan and additional lemon zest, if desired. Serve with lemon wedges.

Notes

Use shelf-stable gnocchi: This recipe is designed for uncooked shelf-stable potato gnocchi added directly to the sauce. Different brands may absorb liquid differently.
Grate the Parmesan fresh: Pre-shredded cheese doesn’t melt as smoothly and can leave you with a grainy sauce.
Watch the heat: Turn it to low before adding the Parmesan and avoid boiling the sauce once the cheese goes in.
Adjust the sauce as needed: If it gets too thick before the gnocchi is tender, stir in a splash of chicken broth.
Add lemon at the end: Start with 2 tablespoons of juice, taste, then add more if you want it brighter. This keeps the sauce fresh and lemony rather than overly tart.
Store leftovers for up to 3 days: Refrigerate in an airtight container and reheat gently with a splash of broth or cream. Freezing isn’t recommended for the best gnocchi and sauce texture.
