Chicken Seasoning Recipe

Jump to Recipe

f you’ve ever stared at a pack of chicken breasts wondering how the heck to make them actually taste exciting, this chicken seasoning recipe is your new best friend. It’s herby, savoury, ridiculously versatile, and made with simple pantry spices you probably already have hanging around in the cupboard.

I’m a firm believer that a good homemade seasoning can completely transform dinner. And this chicken seasoning does exactly that. It’s packed with cozy herbs, garlicky goodness, and just enough paprika to give everything a warm, flavourful boost without overpowering the chicken itself. Whether you’re tossing it onto juicy grilled chicken breasts, crispy air fryer drumsticks, or a whole roasted chicken for Sunday dinner, this blend just works.

The real magic? It takes all of two minutes to make and tastes way better than those dusty little store-bought blends hiding on the grocery store shelf. Plus, you can tweak it however you like. Want a smokier vibe? Use smoked paprika. Craving a little heat? Toss in some cayenne. I also love using this seasoning on crispy potato wedges, sprinkled over chicken rice bowls, or even mixed into ground chicken burgers when I need an easy dinner win.

Helpful Tips

  • Use fresh spices. Fresh spices make a huge difference in homemade seasoning blends. If your spices have been sitting in the back of the cupboard since who-knows-when, the flavour just won’t hit the same.
  • Mix the seasoning directly in the storage jar. Less mess. Fewer dishes. Just add everything to a jar, pop on the lid, and shake it like you mean it.
  • Give it a good shake before each use. Some of the smaller spices naturally settle at the bottom over time, so a quick shake helps redistribute all that flavour.
  • Pat the chicken dry before seasoning. This helps the seasoning stick better and gives you better browning whether you’re grilling, roasting, or air frying.
  • Want to customize it? Go for it. Add cayenne or chili flakes for heat, smoked paprika for a deeper smoky flavour, or extra garlic powder if you’re a garlic lover like me.

One of the best things about homemade chicken seasoning is how easy it is to make it your own. Here are a few simple ways to switch things up depending on your mood or what you’re cooking:

You can use this chicken seasoning right before cooking and still get great flavour. But if you have a little extra time, letting the chicken sit for at least 30 minutes helps the spices soak in even more. For maximum flavour, season the chicken and refrigerate it overnight.

A light coating of oil works best. Olive oil, avocado oil, melted butter, or even a little mayo will help the seasoning stick evenly while also helping the chicken brown beautifully as it cooks.

Not at all. This seasoning is more savoury and herby than spicy. If you want to add some heat, you can easily mix in cayenne pepper or chili flakes.

Absolutely. This seasoning tastes great on turkey, pork, shrimp, roasted potatoes, and even vegetables. It’s one of those blends you’ll end up reaching for constantly.

Stored in an airtight container in a cool, dry place, this seasoning will stay fresh for up to a year. For the best flavour, give the jar a quick shake before each use.

Yes, this homemade chicken seasoning is naturally gluten free. Just make sure your packaged spices are certified gluten free if cross-contamination is a concern.

Notes

Want a smokier flavour? Swap the regular paprika for smoked paprika.
Use fresh spices for the best flavour. Older spices can make homemade seasoning blends taste flat and dusty.
Shake well before each use since smaller spices naturally settle at the bottom of the jar over time.
For the best flavour, use about 1 tablespoon of seasoning per pound of chicken and coat the chicken lightly with oil first.
Store the seasoning in an airtight jar in a cool, dry place for up to 1 year.
This seasoning is naturally gluten free, but always double check packaged spices if cross-contamination is a concern.
